Fasting Pizzas
These cutie pizza pies are both adult and child-approved. Puff pastry serves as a light, chewy crust and piled veggies constitute the flavorful topping. Once you give them a try, they’re sure to become a family staple.

INGREDIENTS
2 cups mushrooms, sliced
2 cups bell pepper strips
1/2 cup chopped onion
1/4 cup sliced black olives
1/2 tsp dried oregano
Salt for sprinkling
2 cups marinara sauce (I love Trader Joe's Tomato Basil sauce)
1 package puff pastry (Pepperidge Farm Puff Pastry Sheets)
INSTRUCTIONS
Preheat oven to 400 degrees Fahrenheit.
Thaw puff pastry sheets (*For quick thawing* Place frozen pastry in microwave in 10-15 sec increments until slightly malleable).
Roll out each pastry sheet and cut 4 squares per sheet.
Place each pastry square about 2 inches apart from each other on a baking sheet lined with parchment paper or sprayed with non-stick spray.
Using a knife, cut a 1 cm square edge in each pastry square.
Spoon about 5 tbsp of marinara sauce inside the center of the pastry squares and spread within the center of the edge.
Top with veggies and sprinkle with oregano & salt.
Bake in the oven for 15 minutes or until the pastry has turned a golden color.
