Fasting Power Salad

Loaded with nutrition, this salad is sure to leave you fortified, energized and satisfied during the Lenten season.

Salad Mix Ingredients

2-3 cups chopped kale

• 1/2 cup shredded carrots

• 1/3 cup dried cranberries

• 1/4 cup chopped walnuts

• 1 tbsp pumpkin seeds

• 1 tbsp sunflower seeds

Salad Dressing

1-2 tbsp sesame oil

• 2 tbsp apple cider vinegar

• 1 tsp honey

• salt and pepper to taste

Instructions

In a bowl combine salad mix ingredients. Then drizzle in the dressing mix ingredients. Using your hands, massage the dressing into the salad. Kale can be very fibrous, so using your hands to incorporate the dressing into the leaves makes for a tender salad. Enjoy!
