Fasting Pumpkin Chocolate Chip Cookies
Packed with pumpkin, warm spices and chunks of chocolate, these cake-like cookies are a holiday staple in our home.
In honor of the start of the nativity fast, I baked up these fasting-friendly pumpkin chocolate chip cookies! They are incredibly moist, truly the perfect mix between a cookie and slice of cake. Here’s how to make them:
Ingredients
* 2 cups all-purpose flour
* 2 tsp baking powder
* 3/4 tsp baking soda
* 2 tsp ground cinnamon
* 1 tsp ground ginger
* 1/2 tsp ground nutmeg
* 1/4 tsp ground cloves
* 1/2 tsp salt
* 1/2 cup granulated sugar
* 1/2 cup packed light-brown sugar
* 1/2 cup vegetable oil
* 1 flax egg
* 1 cup canned pumpkin puree
* 1 cup semi-sweet chocolate chips
Instructions
1. Preheat oven to 350° F.
2. Mix wet ingredients.
3. Mix dry ingredients separately and slowly incorporate into wet ingredients. Do not over-mix or you will have a dry cookie.
4. Scoop out about 2 tbsp of mix and place on a cookie sheet lined with parchment paper.
5. Bake for 11 min or until cookies are close to being fully set. Cookies will be soft when you take them out as their consistency is cake-like.
Yields around 18 cookies!
